In a large mixing bowl, whisk together all of the ingredients.
Grease a small (6-inch) skillet with coconut oil spray and cook on medium-low.
Pour the batter into the heated pan with a 1/4 measuring cup and cover with a lid to cook for 2-3 minutes.
Repeat the process until all of the tortillas have been cooked (we made 7).
Preheat the oven to 400 degrees Fahrenheit.
Add the ground sausage and increase the heat to medium-high. Break it up into crumbs until it’s totally cooked.
Remove the pan from the heat and set it aside.
Make your enchiladas by filling each wrap with meat and cheese. Wrap loosely in plastic wrap and place in casserole dish. Continue until all of the enchiladas are in the casserole dish.
Add more cheese and enchilada sauce on top. Bake for 10-12 minutes, or until the cheese has melted completely. Enjoy!
