Enchiladas Keto: How to Make Them

To make the “Tortillas,” preheat the oven to 350°F.

While we have a great keto tortilla recipe, we tweaked it a little for the low carb enchiladas because we required a thicker tortilla. The only ingredients in these tortillas are eggs, heavy cream, and herbs and spices.

Pro Tip: If you’re having difficulties working with tortillas or they’re breaking, try cooking them in a skillet with the lid on. To assist the tortillas steam, you can add a tablespoon of water to the pan. When the tortillas’ tops steam, they become easier to handle.

Filling for Enchiladas Keto

Most enchilada fillings are keto-friendly, so it’s entirely up to you. Although chicken enchiladas are a popular choice, we’ll show you how to make a breakfast enchilada in this dish. Because the tortillas are prepared from eggs, the flavors complement each other beautifully. You could also try the following fillings:

Enchiladas should be tightly packed into a casserole dish.

This not only ensures that the enchiladas stay wrapped up during baking, but it also provides for a lovely look. This is how enchiladas are traditionally baked. Depending on the size of the casserole dish you use, the enchiladas may need to be placed in various directions. That’s fine; no matter how unorganized it appears before going into the oven, it will turn out beautifully in the end.

Enchilada Sauce with Cheddar Cheese

The sauce is the distinguishing feature of any good enchilada. It has a particular flavor that distinguishes the dish from other traditional Mexican cuisines. When it comes to cheese, you have a little more leeway. Make this recipe your own by using your favorite sort of cheese. We use full fat cheddar cheese because the contrast it provides to the enchilada sauce is pleasing. Other nice cheese possibilities include:

  • Cotija is a type of cheese from Spain.
  • Monterey Jack
  • Cheese with pepper jack
  • Manchego is a type of cheese from Spain.

Is Enchilada Sauce a Keto Approved Product?

Yes, it certainly is! The quality of the components, as well as the carb and sugar content, will vary depending on the brand of enchilada sauce you choose. Carbohydrates in enchilada sauce are typically around 3 grams per 1/4 cup. That implies the enchilada sauce will contribute less than 10 grams of carbohydrates to the overall recipe.

We prefer bottled enchilada sauce or canned green chilis for sauces.
