Here are some recipe tips to keep in mind when making Keto Pecan Christmas Fudge:.
- For the chocolate I used two Lily’s chocolate bars. They are sweetened with stevia and very tasty. They also melt perfectly in the microwave to be poured over the caramel layer.
- To keep them from sticking, I lined the smaller 9×12 baking sheet with foil and pre-sprayed with non-stick spray. You can also cover them with baking paper.
Keto Christmas Fudge with Pecans

Cooking time: 1 HOUR AND 30 MINUTES.
Total time : 1 HOUR AND 45 MINUTES
Sweet butter toffee with chocolate and pecans!
Cover a 9×12 baking sheet with aluminum foil and spray with non-stick cooking spray.
Melt the butter in a saucepan over medium heat. Add the nuts and cook for about five minutes until lightly toasted.
In a separate bowl, mix the whipping cream, vanilla extract, salt and Swerve. Pour the mixture into a saucepan on the stove and cook until it thickens and turns golden brown. This will take about 5-8 minutes, and you can turn up the heat slightly until it bubbles….. but make sure it doesn’t burn, and stir often until smooth and thick.
An important note: Stir this mixture constantly and regularly to prevent it from burning at this stage.
When the mixture has thickened, pour it onto a foil-lined baking sheet and press it down until smooth. Refrigerate until firm to the touch (about half an hour).
Break the chocolate into a bowl and melt 30 seconds at a time in the microwave, stirring constantly. Pour the chocolate over the caramel and spread it evenly.
Place the pan in the freezer and freeze until you are ready to use it, about half an hour. Then break the candy into about 24 pieces.
Store the remaining pieces in a covered container in the refrigerator or freezer, as they may melt on the table.
Pieces may vary in size, so use a 1 x 2 inch piece for one serving.
